This year, add something new to your holiday festivities - with Maine lobster! Lobster is a healthy, delicious, and fun way to show your family and friends how much they mean to you. From baked and stuff to boiled, stew and cocktail - there are many ways to include Lobster in the parties and gatherings of the holiday season.

Maine Lobster Bisque
Servings: 4
2 1½ lb. Maine lobsters, cooked
2 tablespoons butter
2½ cups milk
2 cups heavy cream
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
Remove all the meat from the Maine lobster shells and cut into bite size pieces. Set meat aside and discard shells and intestinal tract. Melt the butter in a large heavy saucepan, add the Maine lobster meat, and sauté for 2-3 minutes over medium heat. Add the milk, cream, salt and pepper, cooking until hot but do not bring to a boil. Remove pan from heat and ladle into soup bowls; serve immediately. Serve with oyster crackers if desired.
